An Italian favorite – Chicken Parmesan

 You have planned your wedding and now you are flooded with choices of reception menu. Why don’t you try something different which is not so conventional? Remember, your guests will not be pleased if they are served regular food. Serve Chicken Parmesan and allow your guests savor the Italian taste.

Chicken Parmesan is a mouthwatering Italian delicacy. Almost all cooks would love to serve this gastronomy. This lip smacking cuisine will make your guests recall your wedding for ages. The dish is best cooked with skinless and boneless chicken breasts.

Here is the Chicken Parmesan Recipe:

 INGREDIENTS

For Sauce:

  • 1/2 large yellow onion
  • 1/4 cup olive oil
  • 2 medium garlic cloves, peeled and minced
  • 1 can crushed tomatoes
  • 1 teaspoon dried oregano
  • Pinch of red pepper flakes
  • Pinch of sugar

For Marinating Chicken:

  • 4 chicken breast cutlets
  • Salt
  • 2 eggs
  • 1 cup breadcrumbs
  • 1 cup freshly grated Parmesan cheese
  • 1/4 cup olive oil
  • 2 Tbsp fresh basil leaves, thinly sliced
  • 8 ounces mozzarella cheese, sliced

 HOW TO COOK 

  • You can either grate or chop onions. But grating is always better than chopping, since it can be done faster and will make the sauce thick. On medium flame hear olive oil in a pan. Put the grated onion and fry for 2 to 3 minutes. Then add minced garlic and fry. After a minute you would find the color changing. This is the time to add tomatoes, red pepper flakes, oregano and sugar. Keep stirring until properly cooked. This would take about 10 to 12 minutes until your sauce is ready.
  • Preheat oven at 400°F. Take a chicken cutlet and wrap it with two layers of wax paper (or you can also use plastic wrap). Now take a meat pounder and beat the chicken pieces to flatten out them to a smooth thickness – between 1/4 – 1/2 inch. Sprinkle salt the chicken pieces properly.
  • In a large shallow bowl, put the breadcrumbs and 1/2 cup of the Parmesan and mix together. Add a pinch of salt. Take another shallow bowl to whisk together the eggs.
  • Take 1/4 cup of olive oil in a large sauté pan and heat on low flame. The oil should be moderately hot and not smoking hot. Not take the chicken pieces and remove the butter paper of plastic wrap. Dip 1 piece at a time first in the egg mixture, then coat it thoroughly with the breadcrumbs. Put the pieces one by one in the hot sauté pan. Turn the heat to low. Then fry the chicken pieces slowly. It will take 3 to 4 minutes for the chicken to turn golden brown.
  • Take a baking dish or casserole pan of size 9×13. Now take the sauce you prepared earlier and spread it evenly on the bottom of the dish. It should form thick gravy.
  • Your chicken cutlets must have become brown on both sides by now. Place them one by one in the baking dish on top of the tomato sauce. Once you have arranged all the pieces put sauce over each of the cutlets. Sprinkle chopped basil on top. Then put grated mozzarella and the remaining 1/2 cup of Parmesan cheese.
  • Bake in the oven for 10-12 minutes, or until the mozzarella begins to brown.

Do You Think Wedding Industry Over-Crowded ?

Vendors are starting to panic due to competition in coming up Wedding Shows. Vendors find a big pool of competitors just because reputed companies are starting to be part of these shows. So, I thought to share my views on opportunities for wedding vendors showcasing in Kismet Wedding Show or Other Wedding Shows.

There used to be a time when there were only a few florists & decorators in town, a handful of business houses dealing with wedding services. That is now ancient. With every minute that we advance into the modern world, people’s wants exceed their needs and the number of suppliers increase accordingly. The similar thing is happening in the wedding industry also and there are numerous voices complaining about it. What with every four in ten business houses promising you the wedding of your dreams? Should we then be complaining or rather rejoice in the fact that our choices increase and ideas multiply? The customers maybe happy but the sellers have a different story to tell.

The wedding industry is getting increasingly overcrowded. This is a threat for some and an opportunity for others. If everyone now started complaining about the increase in number of producers of their product then we would be living in a purely monopolized world. The fashion industry has numerous people, the firms manufacturing FMCG increase every month, the number of real estate providers is huge, I can continue with this list and it probably would never end. So worrying about the fact that there is an increasing number of enthusiasts who wish to try their luck in the wedding industry, we should make every amendment possible to keep our company growing and providing them with fierce competition in the market.

If the fashion industry can do fine with the growing number of newcomers in their field, then I don’t see why we can’t. We have to make the best use of our creative abilities and innovate new designs, update ourselves with the market preferences and alter our pattern of thinking. No one would want to approach a firm who thinks the same way when it comes to planning weddings. You have to have an adequate supply of creative geniuses to let your company running, especially when you have to work in something as creative as the wedding industry. So instead of moaning about the growth in our industry, my advice to all my friends and competitors would be to keep building unique and extraordinary ways by which each of us can grow and prosper in this industry.

For me, my personal experience in this industry has been one of growth and learning. I have learnt to accept experiences as and when they come, to face adversities and to rejoice at the time of success, to discover new things at every step and to mature with every new assignment. It hardly matters if it is a “bad” year or a “good” year. Everything has its pros and cons. Every business has its success and failures but real growth is one in which a person uses his experiences in failure to innovate something new and go farther. A real business person is one who learns from other and does not view his competitors as merely enemies vying to take his position, but one who can use their thinking processes to his advantage and treat them more like teacher whom he would want to impress rather than condescend.
